When I (re)started my culinary career by volunteering at Bishop’s Restaurant in Vancouver in 2008, I could not have guessed (or at least did not guess) that it would lead - fourteen years later - to an incredible meal and a wonderful conversation at the coolest natural wine bar I know.

Join me today at Vancouver’s Bar Gobo, the third fantastic offering from Chef Andrea Carlson of Burdock & Co. and Harvest Community Foods. You’ll meet GM and Sommelier Peter Van de Reep as well as Chef Neil Hillbrandt. As you’ll hear, my path to meeting Peter and Neil started with Chef Andrea, checked in with Chef Robert Belcham of Fuel, ReFuel, Campagnolo and Camp Upstairs, wound through the tiny kitchen counter at Harvest and came to a rest at a wonderful seat at Bar Gobo.

Here, you can enjoy delicious creative food from Neil paired wonderfully with wines you won’t easily find elsewhere, handpicked by Peter. The three of us talk about which wine to pair with asparagus, whether to cheat when making beurre blanc (and, if so, how!), what to ferment to get a taste like a forest fire, the joys of caviar from the Sunshine Coast, wine from the Republic of Georgia, and a whole lot more.

After my talk at Bar Gobo, I wrap up the episode with some thoughts on the Rock n’ Roll Marathon coming up in February in Las Vegas and how excited I am to join the 360 Vegas Podcast crew for their Vegas Winter Vacation at the same time.
