Cheftimony Episode 056 – The Wedding Gig

 

Welcome to the first full episode of Season 5! Today we’ll travel to Keats Island just outside Vancouver, British Columbia where I joined chefs Evan Elman and Warren Chow of Vancouver Private Dining for a very fun catering job. We cooked in an absolutely huge kitchen at Keats Camp, which was wonderful because it had been so long since I’d been in a proper commercial kitchen.

After we’d plated the last course and scrubbed the kitchen, Warren, Evan and I stayed in the kitchen, sipped a drink, and talked about all things culinary. We dive into their pre-catering experience, the difference between restaurant equipment and appliances designed for the home, and stories about chefs overcoming curve balls and last-minute changes without the guests ever seeing them sweat.
